Vanilla Almond Berry Crisp

A quick and easy berry crisp. Don't think of this as a desert: you need fruits, and berries are a great source of vitamins and fiber.

1 1/2 cupOatmeal
2/3 cup sweet (unsalted) butter
1/2 cup almond flour
1/2 cup brown sugar
1/3 cup sliced almonds
1 tbl vanilla
1 tsp cinnamon
1 lb frozen blackberries
1/2 lb frozen cherries

  1. Preheat oven to 350 degrees.

  2. In a 9" glass baking dish, place 1/2 cup outmeal. Spread around evenly on bottom.

  3. Add blackberries and cherries to glass baking dish.

  4. In a large bowl, add 1 cup oatmeal, butter, almond flour, brown sugar, almonds, vanilla and cinnamon. Heat in microwave for 45 seconds. Mix thoroughly.

  5. Spoon topping onto cherries and blackberries in small quantities until the berries are covered.

  6. Bake for 40 minutes.

  7. Remove from oven, cover with plastic wrap, cool, serve warm.
