Greek Salad - a modern take

1 tsp
1 cucumber, 3/4 pealed and sliced into 1/2" cubes
1/3 medium purple onion, sliced into 1/2" pieces
1 red, orange or yellow pepper, sliced into 1/2" pieces
1/2 cup artichoke hearts cut into 1/2" cubes
1/2 cup kalamata olives
1/2 cup black olives
1/3 cup pepperchinis
3 tbl feta cheese
4 oz seasoned rice vinegar
italian spices

  1. cut up cucumber, pepper, onion, artichoke hearts, place in large bowl

  2. add everything else. Mix thoroughly.

  3. serve.
