Rice Pudding

Ingredients
1/2 cup rice
4 cups milk (I use non-fat)
1/3 cup brown sugar or white sugar or honey
1/2 tsp vanilla
1 egg
Optional:
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cup raisons or dried cranberries or dried bananas or chocolate chips or M&M's or Skittles


Directions
  1. We're boys here, we're too stupid to successfully boil milk without burning it. So we put about 3 cups of water in a 3qt saucepan, then place the milk and rice in a 2 qt saucepan, and lower the 2qt saucepan into the 3qt saucepan. This makes a poor man's double boiler. Bring the water in the 3qt saucepan to a slow boil. Simmer until the rice is tender, about 20 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.

  2. In a small mixing bowl, whisk together egg and sugar. Stir in six tablespoons cooked milk / rice mixture, one tablespoon at a time.

  3. Stir egg mixture into the rice and cook on low heat for 5 minutes until thickened.

  4. Remove from heat, stir in vanilla, optional cinnamon, nutmeg. Let stand for 10 minutes.

  5. Add optional fruit, chocolate, candy.
    Note: M&Ms or Skittles will turn the pudding weird colors, which kids will like.
Serve warm or cold.
