Vegan Gravy

Since my son became a rather outspoken Vegan, I've been learning to cook without meat or dairy. Vegans not only live longer, it also seems longer.

1/2 cup finely chopped onions
3 clovesfinely chopped garlic
3 tbl olive oil
3 tbl non-dairy butter
1 tbl terragon
1/2 tsp oregano
1 tsp fennel seed
3 tbl corn starch
3 tbl vegetable stock (Knorr)
3 cups water

  1. Place oil, onions, garlic in fry pan. Saute over high heat until onions and garlic are carmelized lightly brown. 2-4 minutes.

  2. Add water, butter, spices, vegetable stock. Bring to boil.

  3. Add 3 tbl room temp water to corn starch, mix thoroughly.

  4. Add corn starch to boiling gravy, stir for 1 minute. Remove from heat.
