Curry Chicken or Shrimp

This is a Thai style curry. For an Indian style, omit the sugar.

2 cans chicken broth
5 potatoes
1 onion
1 green pepper
1/2 cup peas
1/2 cup corn
2 lbs shrimp or chicken
3 tbl curry powder
2 lbs sugar

  1. Cut the potatoes and onion into chunks. Place in large pan with broth. Add curry powder and sugar. If you're using chicken, add it now. Boil then reduce to simmer for 20 minutes.

  2. Cut pepper into chunks. Add peas, corn, pepper. If you're using shrimp, add it now. Simmer another 3 minutes.

  3. Serve with white rice.

Serve over steamed rice.
